butter. flour. obsession.
Handcrafted. Small batch.
Gone far too quickly.
FLKY is a handcrafted bakery in Greater Kailash 1, built on simple beliefs — exceptional ingredients, time-honoured techniques and relentless attention to detail.
Not reinvented. Not deconstructed. Not turned into something it was never meant to be. Just a croissant that someone actually laminated properly, and a cookie worth the walk.
Laminated, shaped and finished by people, not machines. It takes longer. It shows.
We bake against orders, not onto a shelf. Nothing sits around waiting for you.
So we buy the good butter. The whole product rests on the shortest list of ingredients, so every one of them has to be right.
We take our time.
Every turn triples the layers. Three turns and there are twenty-seven of them, each one thinner than paper, each one holding butter that has to stay exactly cold enough.
Get it wrong and you have bread. Get it right and it shatters.

Cold dough, cold butter, and the rests nobody wants to wait for. Rushing this is the single most common way to make a bad croissant.
A long, cool ferment for flavour rather than a fast warm one for speed.
Pulled at proper colour, not pale. Caramelisation is flavour, and underbaking is just fear.
A short menu, baked to order, in the quantities a day actually needs.

Three days of folding. Worth every one.

Crisp edge. Soft middle. Not negotiable.

Fruit through the middle, compote over the top.

Tears into sheets. The softest thing we make.

Dimpled, salted, oiled again on the way out.

Sesame buns and brioche pav. Built to be filled.

Boiled, then baked. Chewy, blistered, dense.

Separate batch, separate bench. No apology.

Pesto, mustard and cheese dips.
There is nowhere to hide in a list this short. Butter, flour, water, salt, yeast, time. Every one of them either helps or shows.
So we buy the better butter, we let the dough take the hours it wants, and we accept that this is a slower and more expensive way to run a bakery. Sometimes the simplest things are the hardest to get right.

The layers. The crumb. The crust. The chocolate. The butter. The last bite.
Everything is baked to order, so we need a night's notice. Order today, we bake tomorrow, and it reaches you the same morning it comes out of the oven.
